This is so timely because I attended a Guy’s reunion last week to celebrate 52 years since we began training as nurses at the hospital. We also celebrated at the nearby George, which I understand is London’s only surviving galleried inn.
You probably know this but the Maze seems to have been a medieval manor (I don't know where the name came from). John Stow mentions it here and it looks as if it adjoined a manor owned by Battle Abbey down in Sussex https://thames.me.uk/1603StowSurvey.htm
